Killer Beef Chili

This is a delicious chili recipe to cook on cool fall and winter evenings.

Ingredients
- (1.5 tsp) Kosher salt
- (3/4 tsp.) Coarse Black Pepper
- (1) Medium Onion (chopped)
- (6) Garlic Cloves (finely chopped)
- (2) Jalapenos (seeded and chopped)
- (1-2 tsp.) Cumin
- (1 Tbsp.) Chili Powder
- (1 tbsp.) Ancho Chili Powder
- (4 c.) Water
- (2-14oz.) Diced Tomatoes
- (12 oz.) Coke
- (2) Bay Leaves
- (2 Cans) Pinto Beans (rinsed)
- (2 tbsp.) Cornmeal
- (To taste) Sour Cream
- (To Taste) Lime Wedges
- (3 lbs.) Round Roast
- (8 oz.) Smoked Pork Bacon
Directions
- Cut beef into small cubes. Cut bacon into 1/2 in. strips.
- In a Dutch oven, cook bacon until browned.
- Remove bacon.
- Reserve 2 Tbsp. bacon oil. Discard the rest. (or we like to save it for cooking eggs with)
- In a large bowl combine beef, kosher salt and pepper.
- Brown the meat in 2 Tbsp. bacon grease.
- Add onion, jalapenos and garlic. Cook until tender.
- Stir in cumin an chili powders.
- Add tomatoes, Coke, bay leaves, bacon and water.
- Heat to a boil.
- Cover and put in 300* oven for 2 hours.
- Add beans and cornmeal.
- Cook uncovered 30 min. - 1 hr. until the beef is very tender.
- Serve with sour cream and lime wedges.
