The brisket is a large muscle from the front quarter of the steer. This cut consists of layers of flavorful meat, nutrient-rich connective tissue, and grass fed fat. It's a heavily used muscle which adds flavor, but means the meat will be tough unless it's cooked low and slow.
Brisket needs a patient cook to give the meat and fat time to melt together.
We recommend grilling the brisket, smoking it, or cooking it low and slow in the oven or slow cooker. Cut into slices, it makes for a hearty meal all year round!
