Chicken Pluckin' Time

Good Morning,All good things must come to an end... and so it is with our last batch of pasture raised broilers.If all goes as planned, by the end of this week they'll all be snuggly tucked away in heat shrink bags chilling out in the freezer. They have been a good batch of broilers to end the season with.Not a very good picture, but these lambs are available for pre-ordering. I have them scheduled for processing on the 7th of December.We sell our lambs in whole, half or quarter bundles. We may also have some individual cuts as well depending on how many bundles we sell.​Yesterday we got the whole flock into the corral and separated out the lambs from their mothers. Most of my lambs will get sold to a lamb buyer but I picked out the biggest, nicest lambs for processing.Hope your day and week is wonderful,CraigP.S. 'Tis The Season For Beef Stew

What gorgeous weather we have been having of late! I've been absolutely LOVING it. We haven't been able to go camping but have been trying to get in as much time as possible outside and around the fire in the evenings.​ Last Friday evening we invited some friends over to enjoy a meal together and sit around the fire. My menu suggestion was grilled hamburgers (I'm always ready for a grilled hamburger) but my wife, having finer tastes and more in tune with the seasons and what to eat with each season, suggested beef stew. Beef stew it was.She conned me into helping and I purchased some sirloin steak, shoulder roast and rump roast from our farm store and got busy cutting it up into stew sized pieces I did the dirty work and she did the magical combining of this and that ingredient and when it was all said and done, we had some very good stew sitting out under our spreading oak trees enjoying the cool, quiet, moonlit night sky with friends. Classic Beef Stew 2 lbs. Stew meat2 T. oil1 1/2 c. chopped onion1 (16 oz.) can tomatoes with liquid (cut up)1 (10 3/4 oz.) can condensed beef broth, undiluted3 T. quick-cooking tapioca1 garlic clove, minced1 T. dried parsley flakes1 tsp. salt1/4 tsp. pepper1 bay leaf3 med. potatoes, cut into 2" pieces (we like to add sweet potatoes as well)6 med. carrots, cut into 2" pieces1 c. slice celery cut into 1" piecesCut beef into 1 inch cubes. In a Dutch oven, brown beef in oil. Add onion, tomatoe, broth, tapioca, garlic, parsley, salt, pepper, bay leaf. Bring to a boil; remove from heat. Cover and bake at 350* for 1.5 hours. Stir in carrots, potatoes, and celery. Bake covered 1 hour or longer until meat and vegetables are tender. Remove bay leaf before serving. - Carolyn N. Delta Blues Rice Is Here!

Hello from New Grass Farms, I trust you all are doing well. We're all doing fine. Farm Fresh Rice I've mentioned in previous newsletters about starting to carry some farm fresh rice. Well, that is finally a reality and we're happy to offer some very tasty rice. We've been enjoying it in our home and the freshness is not to be equaled by any store-bought rice. Check out the different options here. On the Farm Yesterday I was out riding around looking at the animals and enjoyed seeing the cowbirds intermingling with the cows and even getting some free rides! Beef Update Now's a good time to get your freezers stocked up for the winter months! We have most cuts of beef available and we'll soon have pork cuts available as well. Broilers Out On Pasture

Our last batch of broiler chicks are enjoying bugs and grass these days! We turned them out into their mobile coop a couple of days ago and they seem to really be enjoying their new home.We plan to process them in about 4 weeks. We've been busy getting ready for winter by planting some winter grazing for the cattle. I've also been trying to get things in order for pecan season which is just around the corner. Maybe next spring or fall this Covid thing will be cleared up and we can invite everyone out to the farm for a hamburger fry and farm tour event.

Our Favorite Cookbook Is Now Available

Good morning, I trust this finds you doing well. Thankfully, we're all feeling fine and enjoying life. I'm really EXCITED to tell you about several new products we've added to our farm store. Update from the Farm First, just a brief update on the animals: chicks are doing great. We still have a 100% survival on this batch of chicks! Pigs are getting close to their processing date of September 28. Cattle and sheep are doing fine and the chickens faithfully lay their eggs everyday. New Products This is a winner of a cookbook! Compiled by the wonderful cooks of our church, you won't go wrong with this one. Here is one of the BEST roast recipes you'll find.We've also started carrying rice from the Delta Blues rice company out of Ruleville, MS. Fall is in the Air

Good morning, I trust you had an enjoyable Labor Day weekend. We did. One of the good or bad, depends on how you choose to look at it, things about doing what we do is there are no holidays. The animals must be tended to. Carlton and I did go dove hunting one afternoon and Labor Day morning. Although I'm not a hunter, I thought it would be fun to take my little boy out hunting and we had an enjoyable time sitting out there watching the sun come up in the cool morning air. Around the farm, things are going well. I have some cool season seed ordered that I hope to get drilled shortly to provide forage for the animals through the winter. I'm just finishing up a fencing project that's been needing to be done for a while. That feels good to get some of those projects behind. Also trying to get my ducks in a row for pecan season which is just around the corner.
